High-Temperature Steam Treatment

Eliminates all pathogens including resilient spores

High-temperature short-time (HTST) process uses steam at 102–122°C at 4–6 bar for 20–40 seconds — enough to eliminate harmful microorganisms, resilient bacteria and most resistant spores without adverse effect on quality. Rapid cooling in a fluidised bed immediately follows to preserve moisture and texture. Suited to heavily contaminated sun-dried spices and herbs where complete decontamination is required for export or premium market access.

Low-Temperature Pathogen Reduction

Kills pathogens while preserving sensory quality

Lower temperature treatment below 100°C at 1 bar kills harmful bacteria and pathogens while retaining more of the product’s original sensory and nutritional character. Most resistant spore forms may remain present — making pasteurization suited to products where pathogen elimination is required but complete sterilization is not, such as hygroscopic dehydrated onion and garlic, nuts, and specialty botanical ingredients where extreme heat would affect flavour profile.
